inner5We’ve all seen them: dining establishments in historic buildings, rough stone floors, a setting that screams “old school”–but that’s where the Milton Inn turns the tables. Brian Boston respects the traditions, but wows with the food. Classic American dishes all get a twist, whether it’s in the ingredients or the presentation, and the results are fresh and always delicious. The Milton Inn is a lovely restaurant with a long history that isn’t just resting on its laurels!

Stock Player Brian Boston of the Milton Inn

One word: Stocks.  The basis for every meal Brian Boston produces comes from his homemade stocks. He roasts bones for hours (veal, beef, chicken, lamb) then simmers them overnight with a mirapoux’; next he skims the broth continuously for impurities, then strains it, reducing it to the cleanest most lucious tasting stock imaginable. “It’s a process that takes about four days, we don’t short cut the sauces.  Fresh ingredients, prepared in a loving way, make great things happen”

His favorite cooking tool:  “My hands, they tell you everything.  I can touch a piece of meat and tell you how it’s cooked.  I can do intricate, delicate work cutting fruit.  You have to be able to feel the food.”  He tries not to be too trendy, but he keeps up with innovative cutting edge cuisines in the sides he serves and the presentation.  “Real food doesn’t have to be trendy.  I want to be able to do the best again and again.  If you serve something to someone today, it should be just as good 20 years from now.”  And being from Baltimore County he knows how Baltimoreans love their crab.  “Put crab on anything and they’ll order it. And they love their red meat. They don’t want their food to be to fancy and they want big portions.  Don’t give them the small portions, they want to be fed”.

"On behalf of the Wine & Food Society of Baltimore, I want to thank you and your excellent staff for the stellar dinner provided to us last night. As you could tell from the questions & comments put to you afterwards, those of us fortunate enough to attend were thoroughly impressed with the delightful menu, its preparation and presentation, from appetizers to dessert, although the dessert truly 'brought the house down'!

I would also like to commend Maggie for her responsiveness and efficiency in setting things up and Cheryl for the professional and pleasant way the service was managed.

We look forward to returning to The Milton Inn for a reprise next year."
